More Feijoa Recipes


To the mysterious visitor from NZ who needs more feijoa recipes. Here's 3 more for you to try it out. Enjoy... :)

Feijoa Salsa

Ingredients:-
• 3 feijoas, peeled and finely chopped
• 1 small onion, peeled and finely chopped
• 1 tablespoon finely chopped fresh coriander (cilantro)
• 1 tablespoon brown sugar
• fresh ground black pepper

Directions:-
1) Mix all the ingredients together.
2) Place in small bowl and let flavours mingle for an hour before serving.

Feijoa Crumble (Serves 4)

Ingredients:-
• 10-14 medium size feijoas
• 2 tablespoons brown sugar
• 1/2 cup water
• 100 g butter
• 1 cup flour (white, wholemeal or 1/2 cup of each)
• 1 teaspoon baking powder

Directions:-
1) Pre heat oven to 160'C.
2) Peel & slice fejoas into an ovenproof dish.
3) Add the brown sugar and water and stir to combine.
4) Combine the butter,flour and baking powder.
5) Mix until like fine breadcrumbs. (use a food processor if liked).
6) Sprinkle topping on fruit and bake for 45-60 minutes, until the fruit is stewed and the topping crisp.
7) Serve hot or warm with custard and/or cream.

Feijoa Chicken Curry (Serves 4)

Ingredients:-
• 2 Tbsp olive oil
• 4 chicken breasts, skinned, boned, and cut into bite-sized chunks
• 1 1/2 cups carrots, thinly sliced
• 1 cup red, yellow, or green bell pepper, cubed
• 1 cup onion, thinly sliced
• 1 clove garlic, minced
• 4 to 5 ripe feijoas, peeled, halved lengthwise, and cut into slices
• 1 Tbsp curry powder
• 1/4 tsp allspice
• 1/8 tsp pepper
• 1 Tbsp cornstarch
• One 14 1/2-oz. can low sodium chicken broth

Directions:-
1) In a skillet, heat 2 tablespoons oil.
2) Sauté chicken 3 minutes or until nearly done; remove from pan.
3) Heat remaining oil in skillet; sauté carrots, bell pepper, onion, and garlic for 5 minutes or till carrots are nearly tender.
4) Add chicken back to skillet with feijoas, curry powder, salt, allspice, and pepper.
5) Stir cornstarch into chicken broth; pour into skillet with chicken mixture. Bring to boiling; reduce heat. Simmer, covered, 20 minutes.
6) Serve with rice (optional, not included in the analysis).
